Dark Chocolate Chocolate Chip Gluten Free Cookies

Eating Clean is a very important part of healthy living.
Probably not news to anyone reading this….right?  However, you may be thinking…ummmmm….healthy living…chocolate cookies????  CONFUSED!
Well, total deprivation from Anything Chocolate is not realistic for most of us. At least not most of the people I know.

Be comforted in learning that more and more research is supporting the theory that our bodies stay leaner and healthier when we eat clean 80% of the time and just enjoy a little more 20% of the time. A lot of people refer to it as their “Cheat Meal” (I used to also). Then someone referred to it as a REFUEL Meal/Day. I LUV THIS!  I’m a Virgo and a bit of a stickler for rules and the word cheat always rubbed me wrong. The word REFUEL sits better with me mentally and emotionally. Since food has so much of an emotional connection, let’s think of refueling physically and emotionally (20% of the week).

I’m choosing chocolate today because it is very much an emotional feeder for me (and my husband). This is a recipe that I tweaked from a Scharffen Berger recipe. They are so rich, that 1 does the trick!
(Then ya can freeze the rest for later!)


  • 1/3 cup Tapioca Flour (imagine you could use any type, just one I had on hand)
  • 1/4 teaspoon Xanthan Gum
  • 1/3 teaspoon baking powder
  • 1/4 teaspoon sea salt
  • 6 ounces 99% cacao unsweetened chocolate (used Scharffen Berger)
  • 6 ounces Enjoy Life semi-sweet chips
  • 2 eggs
  • 1/4 cup unsalted butter
  • 1 cup sugar (I subbed mixture of Stevia & Lakanto to keep them sugar free, naturally…remember, Truvia is not 1-1 so follow exchange. Stevia is sweeter so you need less.)
  • 1-1/2 teaspoons finely ground coffee (or instant)
  • 1 teaspoon pure vanilla extract
  • 1/2 cup walnut pieces (optional, I like the balance they bring)

Preheat oven 350

Mix flour, Xanthan Gum, baking powder, and salt in small bowl and set aside.

In double boiler (or round glass cooking dish that fits in a pot w/ enough space under it for water), melt butter and 6 ounces of dark chocolate over simmering water. Stir occasionally until mixture is smooth. Remove from heat.

As it cools, in a large bowl, use an electric mixer on high speed to beat eggs, sugar (or stevia), coffee, and vanilla. Beat for 10 minutes until the mixture is thick.

Turn mixer down to low speed and slowly add the warm butter and chocolate mixture. Scrape down the bowl and mix until just incorporated.

Add dry ingredients, chocolate chips, and walnuts and stir thoroughly by hand.

Line 2 large cookie sheets with parchment paper. Line dough 2 inches apart, in heaping tablespoons. Bake for 10-12 minutes total. Half way thru baking time, rotate the sheets from top to bottom and front to back. Be sure not to over-bake. Remove from pan with metal spatula and cool on racks. (Plastic spatula usually smashes them.)

Makes about twenty-four 2-3 inch melt in your mouth cookies.

Cookies will keep at room temp for 2 days. Since the goal is NOT to eat them all…FREEZE THEM and they will keep for a month.

Remember, these are gluten-free and if you use stevia, lakanto or truvia…sugar free. They are not low-fat or calorie free. So enjoy on your “refuel” day!
